FELLOW FEATURE: Sustainability + Nutrition

[Regional Nutrition and Wellness Manager,] Jasmine Chan partnered with [Former Bon Appetit Fellow] Taiyo Scanlon-Kimura to table in the Marketplace Cafe at the beginning of April. With National Nutrition Month and Earth Day promotions fresh in our minds, Jasmine featured a delicious, waste-friendly slaw using broccoli stems and carrot shavings, plus recipe handouts so students could recreate the dish themselves. [Students played] Food Jeopardy board while toting swag donated by the USF team and tested a dozen students (and a couple team members) on their food systems knowledge. Most participants gravitated towards the Sustainable Seafood and Food & Climate Change categories while munching on slaw, and the last contestants were ecstatic to win Bon Appetit-branded hats for their efforts.
